Banana Jumbo Cookies

Another use for those overripe bananas!

Cream together:
1 c shortening
1 c sugar
2 eggs

In another container, blend:
1 c bananas, mashed
1/2 c buttermilk (or 1/2 c milk + 1 1/2 t lemon juice/vinegar)
1 t vanilla

Add to creamed mixture.

Then add:
3 c flour
1 1/2 t baking soda
1/2 t salt

*Chill dought for 1 hour. Drop by big teaspoonfuls on a greased cookie sheet.
Bake at 350 for 10-12 minutes.

FROSTING:
(Blend until smooth)
1 cube butter, softened
1 lb powdered sugar
3 T banana, mashed
vanilla (optional)

Mom's Chocolate Chip Cookies

Cream until light and fluffy:
1 c shortening
1 c brown sugar
1/2 c white sugar
1 t vanilla

Add 2 eggs and beat well.

Add:
2 c flour
1 t baking soda
1 t salt

Add chocolate chips and nuts (optional)

Drop by the teaspoonfuls onto an ungreased cookie sheet. Bake at 375 for 10 minutes or until light brown. Cool slightly before removing from pan. Makes 3-4 dozen. Freezes well.

Peanut Butter M&M Cookies

Mix with a mixer:
1 c sugar
1 c brown sugar
1 c shortening
1 c peanut butter
4 T milk
2 t vanilla
2 eggs

add:
2 2/3 c flour
2 t baking soda
1 t salt

then add:
1 bag plain M&M's

Bake 375 for 12 minutes on an ungreased cookie sheet.

(Can emit the M&M's and put an unwrapped Hershey kiss on top instead.)
