White Bean Chocolate Chip Cookies

WHAT A PLEASANT SURPRISE!
These soft, chewy cookies are made with white bean flour.
The first GLUTEN-FREE thing I have made, that I happily overate!



Mix together:
1 1/4 c sugar
3 T Instant Clear Jel

Add, and cream well:
3/4 c shortening
3 eggs

Add, and mix well:
2 T vanilla
1 T molasses
2 1/2 c flour
1 1/2 t baking soda
1/2 t salt

Add:
1 c chocolate chips

Scoop 12 balls onto a 9X13 greased cookie sheet.
Bake at 350 degrees for 9 minutes. DELICIOUS!

Yields: 2 dozen cookies.

Violet's Chicken Salad Sandwiches

Mix all ingredients in a bowl:
3/4 c mayonnaise
2 c boneless, skinless, chicken breasts; cooked and cubed
1 t dry Hidden Valley Ranch dressing mix
1/4 t pepper
1-2 celery rib, thinly diced
1 green apple, diced
1 c thinly sliced almonds

Serve on pitas, bread, or croissants.

Chicken Lunch Dip

Mix together:
1 can white chicken
1/2 c cheddar cheese, grated
1 T mayonnaise
1 t lemon pepper

Eat with crackers.

Use soy cheese, and gluten free crackers for allergy free substitute.

Molly's Incredible DOUGH (for rolls, breads, pizza dough...)



My aunt makes the most amazing rolls. We have them at every bridal and baby shower event... Good for sandwiches, with soups, eaten plain, and any other way you could think of.

In a mixer, combine (looks like cake batter):

5 c HOT water
1 T salt
1/2 c honey
1/2 c instant potato flakes
3/4 c oil
3 c flour

Then add:
3 T SAF Instant yeast
10 c flour (one cup at a time, until dough forms a ball and sides of mixer are clean.)

Knead 1 minute. (Power 2).
Stop and add 1 more cup flour.
Knead 3-4 minutes more.

Grease cookie sheet.
Separate dough into 4 equal pieces.
Roll out to a 14" circle on a buttered counter.
Using a pizza cutter, cut dough into 12 triangles. Grease hands, and roll each triangle from the wide end to the point. Place on sheet 3 across and 8 down so you get two dozen in each pan. (The closeness makes them fluffy.)

Bake 15 minutes at 150 degrees. (While you roll the next pan.)
Then turn oven to 350 and bake 15-20 min. or until tops and bottoms are light brown and crispy.

ENJOY!

Yields: 4 doz rolls.

Can use same recipe to make whole wheat, 1/2 whole wheat and 1/2 white flour rolls, cinnamon rolls, breadsticks, pizza crust, or bread loaves.

For cinnamon rolls:

Roll out dough. Spread butter on the dough. Sprinkle cinnamon sugar, roll, and slice into rolls 3/4" thick.

For Breadsticks:

Press dough into the cookie sheet with buttered hands, and cut into strips. Brush with melted butter and sprinkle with Parmesan cheese.

For bread loaves:
Add 1/2 c oil. Makes 5 loaves.

p.s. this picture is of a gluten-free try with this recipe. I didn't change anything, except substituting some GF flour for the wheat flour here. They were okay. I'd like to try a different flour blend...

Cilantro Burritos

In a blender, process on low for 30 seconds:
1 1/2 c mild or medium green sauce, (Medium La Victoria Salsa Verde works well)
1/4 c heaping cilantro sprigs
1/4 c (heaping) fresh parsley
1/2 T lime juice
3 cloves garlic, minced

Pour 1/2 of sauce in the following and coat:
3 c boneless, skinless chicken breasts, cooked and cubed
1/3 c shredded mozzarella cheese

Pour chicken mixture into 6 tortillas.
Roll, and place seam side down in a greased pan.
Pour rest of sauce on top. Sprinkle with more mozzarella cheese.

Bake uncovered for 25 minutes at 350.

(Substitute a gluten free tortilla)

Black Bean and Corn Salad

Dressing:
1/3 c lime juice
1/4 c olive oil
1 clove minced garlic
1 t salt
1/8 t cayenne pepper
1/2 t oregano

In a bowl, combine:
2 (15 oz) cans black beans, drained and rinsed
1 1/2 c frozen corn kernels
1 avocado, peeled and diced
1 red bell pepper, seeded and chopped
2 tomatoes, chopped
6 green onions, sliced
1/2 c cilantro, chopped

Shake dressing, and pour over salad. Stir to coat.
Serve plain, or with tortilla chips.
Can add 2 c cooked chicken and 1 1/2 c diced Monterey jack cheese.

Pace Chili Chicken Soup

Combine in a crockpot or pot:
3 boneless, skinless, chicken breasts- cubed, browned
1 c onion, chopped
2 garlic cloves, minced
2 T olive oil
2 cans (14 oz each) stewed tomatoes or 4 c fresh diced tomatoes
2 cans (15 oz each) pinto beans, drained or 4 c fresh
1 can (15 oz) kidney beans, drained
1 t ground cumin
1/2 t salt

Cook on low for 8 hours.
Garnish with avacado, cheese, sliced green onions, and sour cream.

Pumpkin Chocolate Chip Cookies

In a bowl, mix:
1 c butter, or margarine
2 eggs
1 t vanilla
1 3/4 c pumpkin
1 c sugar

Add:
2 1/4 c flour (GF blend if needed)
1 1/2 t pumpkin pie spice
1 t baking powder
1/2 t baking soda
1/2 t salt

Stir in 2 c chocolate chips.

Bake 375 for 15-20 minutes.

GLAZE:
1 c powdered sugar
1 1/2 T milk (or dairy free milk)
1/2 t vanilla

Turtle Waffle Cookies

In a saucepan, melt:
1 stick butter, or margarine

Add:
2/3 c sugar
1 t vanilla
2 eggs
1 c flour (GF flour if needed)
3 T cocoa
1/2 c chopped nuts
dash of salt

Stir well. Drop by spoonfuls on a heated waffle iron. Close lid and bake for 1 minute.

Use for:
Base for ice cream sundaes
Ice cream sandwiches
Or just eating!

Cookie-Cutter Framed Eggs

Use a cookie cutter to cut a shape in the middle of a bread slice.

Coat a nonstick pan with oil spray on medium-high heat. Place the toast in skillet, fill the hole with a beaten egg, and reduce heat to low.

Place skillet under the broiler for about 3 minutes until egg is set.

Use gluten free toast if needed.

Gluten Free Flour Combinations

As no one flour will imitate wheat flour in texture, properties, and nutrition, in order to find a comparable- you can try a combination or gluten free flours instead.
Here are some I want to try.

Bread and Muffin Mix:
2 parts white rice flour
2/3 part potato starch flour
1/3 part tapioca flour

Cake and Cookie Mix:
2 parts Asain Sweet Rice flour
2/3 part potato starch flour
1/3 part tapioca flour

Other:
3 c brown rice flour
1 c tapioca flour
2/3 c corn flour
2 t xanthan
1 1/2 c potato starch
1 c pinto bean flour
1/2 c teff flour (for coloring)

- I had a delicious chocolate chip cookie today with pinto bean flour(straight across substitution)in place of wheat flour. IT WAS DELICIOUS. Must experiment.

New York Style Gluten Free Pizza Crust

In a small bowl, dissolve:
2 T rapid rise yeast
1 t sugar in
1 1/3 c warm Rice Milk

In a mixer bowl, blend together:
1 1/3 c brown rice flour
1 c tapioca flour
2 t guar gum
1 t salt
2 t unflavored gelatin powder
2 t dried Italian seasoning

Add, and mix well:
2 t olive oil
2 t apple cider vinegar

Grease and flour the pizza pan.
Pat down dough on pan- sprinkle top of dough with GF flour, so it doesn't stick to your hands. Rub olive oil on top of patted out crust.

Bake un-topped crust for 10 minutes. Remove from oven and add toppings. Return to oven and bake for another 20 minutes.

Gluten Free Chocolate Chip Cookies

These are great for gluten, and non gluten eaters.

Mix together:
1 stick butter (or margarine), softened
1/2 c sugar
1/2 c brown sugar

Add and mix:
1 t vanilla
1 egg

Mix together then add to wet ingredients:
1 1/2 c GF oatmeal blended in mixer into flour
1 c GF flour (1/2 c sorghum flour, 1/4 c amaranth flour, 1/4 c tapioca starch)
1 t xanthan hum
1/2 t baking soda
1/2 t baking powder
1/2 t salt

Add semi-sweet (for non dairy) or milk chocolate chips.

Bake 375 for 13 minutes.

Gluten Free French Bread

In a heavy-duty mixer, combine on the low setting:
2 c white rice flour
1 c tapioca flour
1 t xanthan gum
1/2 t salt

In a small bowl, dissolve:
1 T sugar in
1 1/2 c lukewarm water
then add-
2 T fast rise yeast
Wait until mixture slightly foams, then blend into dry ingredients.

Add, and beat on high for 3 minutes:
2 T butter, melted
2 egg whites, beaten slightly
1 t vinegar

To form loaves, spoon dough onto greased and cornmeal dusted cookie sheets in two long French-loaf shapes. Slash diagonally every few inches. Brush with melted butter, if desired.

Cover and let rise in a warm place until doubled in bulk, (20-25 minutes.)
Cook at 400 for 40-45 minutes.
Remove from pan to cool.

Freezes wonderfully.
Yields: 2 loaves

Horchata

In a blender, process for 1 minute:
5 c water
1/2 cinnamon stick
1 c uncooked rice

Soak for 3 hours, then strain.

Add to the milk:
1/2 t vanilla
2/3 c sugar
1 1/2 c milk
1/4 t more cinnamon (if needed)

Trevor's Lime Mayo Dip

Combine:
1/3 c mayonnaise
1/8 t cumin
2 T orange juice
1 T lime juice
1/8 t hot sauce (Chalula works well)

Heat in a saucepan, or serve cold.

Barbecued Chinese Chicken Lettuce Wraps

Preheat pan/wok, and add 1/4 c olive oil

Add, and sear:
2-3 lbs chicken breasts or tenders, chopped into small pieces

Add:
4 c fresh shiitake mushrooms, sliced (remove tough stems, and brush with a damp towel to clean)
and cook for a minute or two.

Add, and cook a minute more:
Salt and pepper
1" ginger root, finely chopped or grated

Grate zest of 2 oranges into pan.

Add, and cook another minute:
1 red bell pepper, diced small
12-16 oz sliced water chestnuts, drained and chopped
6 scallions, chopped

Add 1/3 c hoisin (chinese barbecue sauce) to coat mixture evenly.

Pile spoonfuls of mixture into fresh lettuce leaves, wrapping lettuce around filling.
Enjoy.

Pulled Pork Tacos

This is one of my favorite meals right now. So filling and easy.

Combine in a crock pot, and mix well:
1/4 t oregano
1 t cumin
1/2 t cayenne pepper
1 t chili powder
3 bay leaves
3 small cans diced green chilies
1 jalapeno (seeded, wedged)
1 lg onion, wedged
2 stalks of celery
3 cloves garlic, chopped
salt and pepper

Place 1 5 lb Boneless Pork Roast on top of mixture. Salt and pepper it. Place whole garlic cloves, and 1/4 bunch fresh cilantro on top.

Cover and cook on low for 10-12 hours.

After cooking, remove the roast and stain the juice from the crockpot. Put liquid back in crockpot. Pull the pork (shred) and place back in with the juices.
Add 1 (14-16 oz) jar Mild Salsa Verde

Continue cooking covered for 2 hours.

Eat with fresh tortillas, black beans, avocado, and cheese.
Substitute allergy free condiments if needed.

Freeze leftovers for a quick meal!

Gluten Free Waffles, Pancakes, and Crepes

Mix:
1/3 c olive oil (can use less, and increase your apple juice and Rice Dream.)
3/4 c Rice Dream
3/4 c apple juice
2 eggs

Add dry, and mix well:
2 c gluten free flour
(rice flour works well, giving it a slightly crispier texture. 1/2 brown, 1/2 white rice flour)
1 t baking powder

To make crepes, add more apple juice for a thinner batter.
Heat your waffle iron or skillet and go!

Serves: 4

Gluten Free Chocolate Brownies

Chocolate Cake Brownies
Gluten-Free, Dairy-Free, Egg-Free, Soy-Free, Peanut-Free

This recipe was adapted from the March edition of Guideposts Magazine. You could substitute regular flour for the rice and amaranth flour if gluten is not a concern.

Ingredients:
3/4 cup coconut oil
3/4 cup honey
1 1/4 cup milk substitute
1/4 cup flaxseed meal
2 t vanilla
1 1/2 cups rice flour
1/2 cup amaranth flour
1 cup cocoa powder
1 t baking soda
3/4 t sea salt
2 t baking powder
1 cup organic walnuts
1/2 cup chocolate baking chips

Preheat oven to 350. Grease the inside of a 9x13 pan with coconut oil. Combine oil, honey, milk substitute, flaxseed and vanilla in order, then mix 1 minute on medium. Gradually add flours and cocoa powder - mix one minute on medium. Add baking soda, salt and baking powder in order, then mix 1 minute on high. Add walnuts and chocolate chips - mix well. Pour into pan and bake 17-20 minutes. Store in fridge.
