BBQ Ribs

Brown 4-5 lbs. ribs in oven at 400 degrees for 15 minutes.
Turn over, and brown 10-15 minutes more.
Drain fat then place in a cooking pan, or crock pot.

For sauce, combine the following and then pour over meat:
1/2 c bottled Heinz 57 Sauce
1/2 c ketchup
2 T brown sugar
2 T white wine vinegar
1/4 t salt
1/2 t Hickory Smoke salt or 2 dashes liquid smoke

Cook on low 6-8 hours.

Yields: 6 servings

Beef and Vegetable Stew

2 1/2 lbs. beef cubes (about 1.5" pieces)
8 medium potatoes, quartered
8 large carrots, cut in 4 chunks each
2 bay leaves
1 pkg dry onion soup mix
1 can cream of mushroom soup
1 can cream of celery soup
1 can 8 oz tomato sauce

Layer (in a crockpot or deep pan,) 1/2 beef, 1/2 veges, 1/2 beef, 1/2 veges.
Cook at 275 for 6-8 hours, or in a crockpot all day.

Pace Chili Chicken Soup

Combine in a crockpot or pot:
3 boneless, skinless, chicken breasts- cubed, browned
1 c onion, chopped
2 garlic cloves, minced
2 T olive oil
2 cans (14 oz each) stewed tomatoes or 4 c fresh diced tomatoes
2 cans (15 oz each) pinto beans, drained or 4 c fresh
1 can (15 oz) kidney beans, drained
1 t ground cumin
1/2 t salt

Cook on low for 8 hours.
Garnish with avacado, cheese, sliced green onions, and sour cream.

Oven BBQ Chicken

Fry (in 2 T oil) until browned:
4 boneless, skinless chicken breast

Place chicken in a greased 9X13 pan.

Cover with your favorite BBQ sauce.

Bake at 350 for 1 hour, or until done. Basting occasionally.

or put in crockpot(after browning), and cook 7 hours on low.


For Homemade BBQ Sauce:
Saute 1/3 c onion, chopped in 3 T butter. Then add,
1 T Worcestershire sauce
1/2 c water
3/4 c ketchup
1/3 c vinegar
3 T brown sugar
2 t prepared mustard
1/4 t salt
1/8 pepper
Simmer 15 minutes.

Pulled Pork Tacos

This is one of my favorite meals right now. So filling and easy.

Combine in a crock pot, and mix well:
1/4 t oregano
1 t cumin
1/2 t cayenne pepper
1 t chili powder
3 bay leaves
3 small cans diced green chilies
1 jalapeno (seeded, wedged)
1 lg onion, wedged
2 stalks of celery
3 cloves garlic, chopped
salt and pepper

Place 1 5 lb Boneless Pork Roast on top of mixture. Salt and pepper it. Place whole garlic cloves, and 1/4 bunch fresh cilantro on top.

Cover and cook on low for 10-12 hours.

After cooking, remove the roast and stain the juice from the crockpot. Put liquid back in crockpot. Pull the pork (shred) and place back in with the juices.
Add 1 (14-16 oz) jar Mild Salsa Verde

Continue cooking covered for 2 hours.

Eat with fresh tortillas, black beans, avocado, and cheese.
Substitute allergy free condiments if needed.

Freeze leftovers for a quick meal!

Dijon Sirloin Tips

In a skillet, brown:
1 1/4 lb sirloin tips, cubed
2 T butter

Put in a crockpot.

In the same skillet, saute:
3 c fresh mushrooms, sliced
1 clove garlic, minced

Put in the crockpot.
Cook on low for 2 hours (or bake at 300 for 2 hours) until meat is tender.

Combine, and boil for 2 minutes:
1/2 c beef broth
1/4 c white wine vinegar
1 1/2 t soy sauce
Set aside.

Combine, and stir into broth mixture:
2 t Dijon mustard
2 t cornstarch
1/2 c whipping cream

Cook over medium heat, stirring occasionally, until thickened and bubbly.
Add beef mixture.
Serve over egg noodles.
Garnish with parsley if desired.

(1 1/2 times it for 6 servings)

Taco Soup

Brown:
1 lb hamburger
1 onion, chopped

Add:
1 can kidney beans, drained and rinsed
1 8 oz can tomato sauce (or V8)
1 4 oz can diced green chilies
2 14 oz cans diced tomatoes
1 15 oz can corn, drained and rinsed
2 c water
6 tsp taco seasoning

Simmer in crockpot until ready to serve.

Chili Pot Roast

1 roast
2 bottles chili sauce
salt and pepper

Put in crockpot and cook on high 4-5 hours. Baste.

Crockpot Chicken Stew over Biscuits

Put in crockpot:
2 envelopes chicken gravy mix
2 c water
3/4 c chicken broth
2 cloves garlic, minced
1/2 T parsley
1/2 t chicken bouillon
5 medium carrots, cut in 1 inch chunks
1 large onion, cut in 8 wedges
3-4 chicken breasts
salt and pepper

Combine and slowly stir in cooker:
3 T flour
1/3 c cold water

Serve atop (1 tube) buttermilk biscuits, or on rice.

Hamburger Soup

Brown:
1 lb ground
2 lg onions, chopped

Add 4 c water
4 c tomatoes (or juice)
5 medium potatoes, peeled and cubed
3 large carrots, sliced
1 t garlic salt
1 bay leaf
3 t soup base
1/2 t pepper
1 t salt

Bring to a boil, lower heat, and simmer vegetables (1 hour or until tender).

Just before serving stir in 1/2 to 1 lb jack or cheddar cheese, cubed

Merle's Spaghetti Sauce



This spaghetti sauce recipe has been in my family lots of years.
I'll warn you that once you have it,
buying jarred sauces at the grocery store will never happen again.

Saute:
1/2 c chopped onion
1 lb ground beef or ground turkey
2 cloves minced garlic

Add:
4 c diced tomatoes (2 cans)
2 8 oz cans tomato sauce
1/4 c dried parsley
1 1/2 tsp oregano
1/2 t thyme
1 c water
1 bay leaf

Remove the bay leaf and enjoy with your favorite pasta.
Can freeze leftovers.

Lentil Soup

In a crockpot, combine:
2 c lentils
2 t salt
8 c water
sausage or beef, browned
1 clove garlic
1 onion, diced
1 T parsley
2 c diced tomatoes
2 c tomato juice
1 c carrots, sliced
1 c celery, sliced
salt and pepper to taste

Cook on low 8 hours.

Roast Beef Sandwiches

This recipe is one of my extended family's favorites. It is great for large groups...or your own family. It is DELICIOUS!

Put in a covered crockpot overnight, (or at 200 degrees in the oven):
1 Rump roast sprinkled liberally with-
onion salt
celery salt
garlic salt

In the morning, remove roast, and slice meat into 1/4" slices, and put back into the crockpot. Add enough beef broth to cover meat. Add more seasoning. Cook all day.

Eat meat on fresh hard rolls with a spoonful or two of the juices.
