Salmon Burgers

Salsa
2 lg diced peaches
1 small cored, seeded/finely chopped
1 t fresh lemon juice
2 1/2 t sugar
1/8 t salt
2 T chopped cilantro

Mix gently.

Burgers
Preheat grill.
In a medium sized bowl:
Drain 14 3/4 ox canned Red Salmon. (Break into small chunks, and mash bones w/fork)
Add 1 finely chopped scallion.
2 1/2 t lemon zest
1 lg beaten egg
1/4 t pepper
3 1/2 T dried whole wheat bread crumbs

Mix well. Shape into 4, 1 inch thick patties. Gently place on grill or in a grill basket. Grill on medium/high heat 3-5 minutes - until golden brown on both sides. Then 3 minutes more. Serve w/ 1/2 c salsa on the side or on top.

1/2 c salsa + 1 burger = 5 pts

Creamy Tuna on Toast

Love Grandma D.

In a saucepan, make a white sauce by bringing to bubble:
3 T melted butter
4-5 T flour

Add:

2 c milk
Heat, and stir, until thickened

Add:
1 t salt
1 t lemon juice
1 t horseradish
1 can tuna fish, drained
pepper to taste

Stir often until it comes to a boil.


Spoon a ladle-full over hot over toast.
Sprinkle with lemon pepper.

Shrimp Angel Hair Pasta

In a bowl, mix:
1-2 lbs. jumbo frozen peeled and de0veined shrimp
1/2 c dried parsley
2 tomatoes, chopped
3 cloves garlic
1 T dried rosemary
1 T balsamic vinegar
1/2 c olive oil
1 can whole olives
1 bunch green onions, chopped
salt and pepper to taste.

Place in heavy duty foil. Seal by folding tops and sides to seal tight. Bake at 400 for about 30-40 minutes.

Prepare angel hair pasta according to package.
When shrimp is done, pour over pasta. Sprinkle liberally with shredded Parmesan cheese. Toss. Serve.

Salmon Curry Soup

Dice and simmer in 1 box (or 2 cans) vegetable broth until tender:
3 carrots
3 potatoes
1 medium onion
4 stalks asparagus
2 c broccoli
1 zucchini
1 yellow squash
1/4 head cabbage, chopped
(or any vegetables you have!)

Add:
2 cans coconut milk
1/2 t green curry paste
1 t sugar
1 t vanilla

Simmer 5-10 minutes. Enjoy.

Apple-Maple Salmon

Marinade salmon for 3 hours in:
1/3 c apple juice
1/3 c maple syrup
3 T soy sauce
1 T dried minced onion
2 cloves garlic, minced

Grill or bake fish until flaky.
